Massaman takes curry toward warm spice notes. Potatoes and onions work well in a coconut sauce, and the paste can be the starting point for different proteins. Choose a recipe that matches the cut you are cooking: a quick-cooking ingredient and a braising cut need different treatment.

Cook the paste as directed, then add your chosen liquids and ingredients in sequence. Keep enough liquid in the pan while firmer ingredients soften. Taste near the end before adding more seasoning or a sweet or sour element.

No. The two pastes have different blends. This Massaman listing includes cardamom, cinnamon and nutmeg alongside chili and aromatics.

Do I have to add peanuts?

How should I choose a protein?
